The cotyledons, or seed leaves, occupy the vast majority of the space within this type of seed, as they typically do in all the legumes. These seed leaves store the food for the developing embryo in the peas and beans, so such seeds have little starch storage in endosperm. In many other plants, the grasses for instance, most starch storage occurs in the endosperm.
